Friday night consisted of me making freezer strawberry jam. By the end of the night, I was tired.
Saturday morning began with my usual Saturday morning Zumba class. Then the afternoon was spent shopping -- picking up some items with coupons, remaining items for the dishes I planned on making for our get together at my sister Silia's house.
I had four 16 oz strawberry containers at home. I picked up 6 more since they were only $.97 each at Smith's. Little did I know, Haloti picked up 10 when he went shopping. That meant I had about 20 lbs of strawberries that needed to be used up. I would only use 3 for the cakes and the salad I was planning on making. That left 17. I spent the rest of the evening making more jam. Instead of using the small 8 oz. freezer jam containers, I bought Ziplock 16 oz twist on containers. By the end of the night, again, I was tired and in no mood to organize and declutter.
Easter Sunday --
It consisted of me sleeping in. I didn't get up until 9:30 am. I spent the morning preparing our food that I was taking over to my sisters: funeral potatoes, my special recipe italian dressing/sweet & sour chicken, asparagus with hollandaise sauce, spinach/strawberry salad and 2 strawberry cakes. All went as planned and my food was cooked by 1 pm.
Here's a snapshot of one of the cakes. This one is a french vanilla cake. The other one was lemon (my favorite).

Here's my recipe:
Cake
*You're favorite cake mix (I like to use lemon, yellow, white, or french vanilla)
-Bake according to directions on box, let it cool.
Cream cheese filling
*1 softened 8 oz cream cheese
*1 cup powdered sugar
*half of 8 oz tub of whipped topping
-Mix all 3 ingredients and spread over cooled cake.
Strawberry topping
*1 box strawberry junket Danish dessert filling/glaze mix
*1 16 oz container of strawberries (washed, hulled & sliced)
-Cook glaze mix according to package directions. Let cool, then add strawberries. Once mixture is cooled, spread over cream cheese filling.
We went over to Silia's and she hosted an Easter Egg hunt for the kids. It was a fun Easter get together with my siblings. Lots of good food. Wish I had some pictures, but didn't take my camera.

I love it! I have a long list of items I want her to cut out for me.
All in all, we had a good Easter. We watched both sessions on Sunday. The messages were wonderful. I was able to learn a lot of things.
